Why one factor cannot convert cups to grams
A cup measures volume and a recipe needs mass, so the conversion between them is a density — and density is a property of the ingredient, not a universal constant. A cup of cocoa powder is 85 g and a cup of honey is 340 g: the same measure, a factor of four apart.
That is why this asks which ingredient before converting anything. A single generic factor would be right for water and wrong for everything else, and the errors run in both directions depending on whether the ingredient is lighter or denser than water.
Water is the one case where the two coincide neatly: one millilitre weighs one gram, so a cup of water is 236 g. Every other ingredient departs from that, and the departure is exactly what the density figure encodes.
Flour, and the twenty percent that ruins a cake
Flour is where volume measurement fails hardest. Scooping a cup through the bag compacts it and gives about 150 g; spooning it in lightly and levelling gives about 125 g. That is a 20% difference from the same nominal measure, produced entirely by how the cup was filled.
Twenty percent more flour in a cake makes it dry and tight. In bread it changes the hydration enough to alter the handling of the dough. In pastry it is the difference between short and tough. None of it is visible until the thing comes out of the oven.
This is the whole reason serious baking recipes are written in grams and why a digital scale is the highest-return purchase in a baking kitchen. It removes the largest single source of variation, and it removes it permanently rather than requiring technique.
Cups, spoons and the units that share a name
A US cup is 236.6 ml and a metric cup is 250 ml, about 5.6% larger. On one ingredient that is minor; across a whole recipe, applied to several ingredients, it compounds into something the finished dish notices.
Spoons are worse because the gap is larger and nobody expects it. A tablespoon is 14.79 ml in the US, 15 ml in the UK and 20 ml in Australia. An Australian tablespoon is a third larger than an American one, which matters a great deal for baking powder and salt.
Sifting adds another layer. A cup of sifted flour weighs substantially less than a cup of unsifted flour, and recipes specifying sifted flour usually mean sift first and then measure. Measuring first and sifting after gives a different quantity, and the instruction rarely says which.

Does sifting change the weight of a cup?
It changes the weight considerably — sifted flour is aerated and a cup of it weighs noticeably less. Recipes specifying sifted flour usually mean sift then measure, and the order matters.
Why do American recipes use volume at all?
It is a historical convention that persisted because cup measures are cheap and scales were not. Professional and published baking has largely moved to weight for the accuracy.
How do I weigh a partial egg?
Beat a whole egg and weigh out the fraction you need — a large egg is about 50 g without the shell. It is more reliable than trying to halve one by eye when scaling a recipe.
What about brown sugar?
Recipes almost always mean packed, which is why the packed figure is used here. Loosely spooned brown sugar can weigh a third less, and the recipe will notice.
Do density figures vary by brand?
Slightly, with milling and moisture content. The published conventional values are close enough for home baking, and weighing removes the question entirely.
