Water is an ingredient
A cocktail recipe listing spirit, vermouth and bitters is describing about three-quarters of the finished drink. The remaining quarter is water from the ice, and it is as deliberate as anything else in the glass.
Stirring adds roughly 20 to 25% of the drink's volume in water; hard shaking adds 25 to 30%, because the ice fractures and presents far more surface. That difference is part of why the same ingredients shaken and stirred are recognisably different drinks.
Dilution does three things at once: it lowers the strength into the range the drink was designed for, it softens the alcohol's harshness, and it chills. Skipping it gives a drink that is simultaneously too strong and, once it warms, unpleasant.
Ice quality, and why bars make their own
Wet ice straight from a domestic freezer is already at melting point and covered in a film of water, so it dilutes fast and unpredictably. Cold dry ice from a well below-zero freezer chills faster and dilutes more slowly, which is what makes the endpoint controllable.
Size follows the same logic. Large cubes have less surface per unit of mass, so they dilute slowly — which is right for a drink served over ice and wrong for shaking, where fast dilution and chilling is the point.
That is the reason time-based instructions like stirring for thirty seconds are only approximate. They are a proxy for a dilution target, and ice quality changes the relationship more than the count does. Tasting is what actually calibrates it.
Batching, and what it needs that a recipe does not say
Multiplying a cocktail recipe for a party and serving it from a jug produces a harsh drink, because the dilution that would have arrived from the ice never does. The fix is to add water equal to the dilution the drink would normally pick up — 20 to 25% of the volume.
The batch then needs chilling as a whole rather than over ice at service, since ice in the jug keeps diluting a drink that is already at its target. Refrigerating or freezing the batch is what preserves it.
