A food calorie is a kilocalorie — a thousand of the small calories used in physics — which is why nutrition labels capitalise it or write kcal. The thermochemical calorie is defined as exactly 4.184 joules, so the food calorie is exactly 4,184 J. Every factor in this family is exact by international agreement rather than measured, so the only rounding is in the display.

The calorie that is a thousand calories

The calorie used in physics is the energy to raise one gram of water by one degree Celsius — exactly 4.184 joules by definition. The calorie on a nutrition label is a kilocalorie, a thousand of those.

That is why nutrition labels capitalise it as Calorie or write kcal. A 2,000 kcal diet is 2,000,000 physics calories, and the ambiguity has caused genuine confusion in scientific writing.

In joules the food calorie is exactly 4,184. A 2,000 kcal daily intake is about 8.4 megajoules, or roughly 2.3 kilowatt-hours — less electricity than a tumble dryer uses in one cycle, which puts human energy needs in an unexpected perspective.

BTU, therms and the units of heating

A BTU is roughly the energy to raise a pound of water by one degree Fahrenheit. Several slightly different definitions exist; the international table BTU of 1,055.06 joules is the one usually meant.

A therm is one hundred thousand BTU, used for gas billing — about 105.5 megajoules or 29.3 kilowatt-hours. Gas is metered by volume and billed by energy, with a calorific value factor bridging the two.

Which is why gas bills carry a correction factor and a calorific value on them. The volume delivered is measured; the energy delivered is calculated, and the calorific value varies slightly with the gas supply.

How food energy is measured

Originally by bomb calorimetry — burning the food and measuring the heat. That overstates what a body extracts, because the body does not fully digest everything and cannot burn fibre the way a calorimeter does.

Modern labels use Atwater factors: 4 kcal per gram of protein and carbohydrate, 9 for fat, 7 for alcohol. They are averages across food types and they are approximations rather than measurements of the specific food.

The system systematically overstates energy from high-fibre foods and understates the energy cost of digestion itself. It is accurate enough for its purpose and it is not the precise instrument that a printed number implies.
