Grip strength is among the better-validated single predictors of all-cause mortality in adults, outperforming systolic blood pressure in several large cohort studies. It works because it proxies whole-body strength and neuromuscular function rather than anything specific to the hands. Around 10% asymmetry between hands is normal and favours the dominant side. Substantially more than that, or asymmetry favouring the non-dominant hand, is worth mentioning to a clinician. It responds to training like any other strength measure. General resistance training raises it, and it declines roughly 1% a year from the mid-thirties in people who do nothing — which is most of the age effect in the norms above.

What is a normal grip strength?
Around 45 to 50 kg for men in their thirties and 28 to 32 kg for women, declining roughly 1% a year from the mid-thirties in people who do no resistance training.
Why does grip strength predict mortality?
It proxies whole-body strength and neuromuscular function rather than anything specific to the hands. In several large cohorts it outperformed systolic blood pressure as a predictor of all-cause mortality.
How much asymmetry is normal?

Can I train grip strength?
Yes, and general resistance training raises it without any grip-specific work. Deadlifts, rows, carries and hangs all load it heavily.
Does hand size affect the reading?
The dynamometer handle setting does. Most protocols use the second position and record the best of three attempts per hand, which is why consistency of setup matters for tracking.
